Mediterranean Roast

Ingredients:

Chicken drumsticks and/or thighs
1 tin tomatoes
2 or 3 mixed peppers (chopped)
1 or 2 cloves of garlic (crushed or chopped)
1 onion (chopped)
Potatoes (cubed)

Method:

1. Par boil the potatoes (approx 10 mins).
2. Put all the ingredients into a baking tray/pyrex dish with some olive oil and put in the oven for about an hour on a medium heat (180 ÂșC/Gas 4).
3. Serve while hot.
